Recipes from the Farm Market

What to do with all that wonderful summer squash!

The easy:

Small tender squash of all kinds- zucchini, yellow crookneck, patty pan - can be grilled/ broiled.  Cut in half or if a bit larger, in 1 inch slices.  Score with a knife, brush with olive oil and place on the barbecue about 5 minutes on each side will do it.  Season with salt and pepper or brush with balsamic vinegar and it's ready to eat.

Stir-fries and salads are another way to use small tender squash.

For small or larger summer squash two recipes worth the effort:

Zucchini Feta Pancakes

4 cups (packed) coarsely grated zucchini (or any type of summer squash)

4 eggs, separated

1 heaping cup finely crumbled feta cheese

2/3 cup minced scallions (white and green parts)

6 black olives, finely chopped

3 large cloves garlic, minced finely or pressed

1/4 cup chopped parsley

2 T. chopped fresh basil

2 T. all purpose flour

Salt and pepper

butter (for pan)

Mix together all ingredients except egg whites.  Beat egg whites until they form soft peaks.  Fold whites into squash mixture.  Fry in butter until golden and crisp on both sides.  Serve with sour cream or yogurt.  Makes enough to serve as a lunch for 4 or as a side at dinner.  Also can be made small ( 1 T. batter) and served at room temperature as an appetizer.

Zucchini - Carrot Cake

2 large eggs

1cup sugar (white, brown or combination)

2/3 cup vegetable oil

1 tsp. vanilla

1 cup all purpose flour

1 T. unsweetened cocoa

1 tsp. baking powder

1/2 tsp. baking soda

1 tsp. cinnamon

1 cup grated zucchini or other summer squash

1/2 cup grated carrot

1/2 cup raisins

1/2 cup chopped walnuts

1. Preheat oven to 350° F. Butter 9" square baking pan.

2. Beat eggs with sugar in large bowl until mixture is frothy; beat in oil and vanilla.

3. Sift flour, baking powder, baking soda and cinnamon together.  Add to eggs and mix well.

4. Add zucchini, carrots, raisins and walnuts and stir - batter will be stiff.  Spoon batter into baking pan and bake for 35 minutes or until a toothpick inserted in centre comes out clean.  This cake is excellent with cream cheese frosting, but is very nice by itself.

Thanks Donna (a vendor at the New Germany Farm Market) for sharing these recipes!

And some beautiful flowers for your summer barbeque table or patio!
